Pork Liver — 5 lb Bag

Whole pork liver, cleaned and bagged the same week it is processed. This is the cut behind hígado a la italiana — liver seared hard and finished under a pile of onions — and it is what most of our Cuban and Nicaraguan customers come in for. Slice it thin against the grain, salt it late, and do not let it go past medium or it turns grainy.

It is also the cheapest source of iron in the case, which is why we sell a lot of it to families cooking for someone recovering from surgery or anemia.

• USDA-inspected pork, processed in our own federally inspected facility.
• Fresh-frozen, never aged — frozen within days of processing.
• Approximately 5 lb per bag — typically two to three whole lobes.
• Keep frozen. Thaw overnight in the refrigerator, never on the counter.
• Local pickup only at our Hialeah plant. Bring your order number to the office.
